Different mechanics

Different dice mechanics affect not only the chances of success, but also the player perception of fairness and control over the situation. Single dice rolls feel more random than sum rolls, dice pool reinforces the feeling of control, keep best dice gives a sense of advantage, while exploding dice give a sense of awesomeness.

Examples: GURPS, and Dungeon World.

Example: Vampire, the Masquerade.

Roll and keep

Roll multiple dice and keep the best (or worse). You need at least one above the target number. Predictable results with a sense of epicness.
